Struie is the most ambitious new distillery project in Scotland right now. The Thompson Brothers - Simon and Philip - who built Dornoch Distillery into one of Scotland's most respected craft operations, are building Struie at Dornoch South in Sutherland. In March 2026, Highlands and Islands Enterprise awarded the project up to £1.57m to fund the energy efficiency elements of the construction. Struie aims to be one of the UK's largest carbon-neutral distilleries, powered entirely by solar arrays, thermal energy storage, and high-efficiency heat pumps. Production capacity will be up to 400,000 litres of pure alcohol per year. A dedicated visitor centre is expected to welcome around 15,000 visitors annually. Production begins in late 2026.
